What is fudge?

Fudge is an American confection that’s been around for about a century. The suspicion is that someone who has making a batch of caramel probably ended up with a batch of fudge.

Fudge has higher sugar content and is crystalline in nature.

Fudge consists of oil, water, salt, sugar, glucose syrup and milk ingredients. This mix is concentrated to high total solids content. The heating of sugar and milk proteins result in a Milliard reaction.


The hardness and texture of the final fudge is mainly determined by the water content which in turn is controlled by the boiling temperature.

Fudge basically has a toffee formulation, but it contains higher proportions of sugar and milk and is processed to develop a grainy texture.

Fudge is an ideal vehicle for functional ingredients have a rough texture. Recipe can easily be manipulated to include, for example, prebiotics, vitamins and minerals.
